Pergolas
Outdoor kitchen under a pergola: stone and shade, one design
An outdoor kitchen under a pergola is a stone kitchen — granite, quartzite, sintered stone or marble worktop, barbecue or oven in refractory stone — placed beneath an aluminium pergola and drawn together with it: posts, smoke outlet, downpipes and paving are settled once. Michelessi, marble and stone specialists in Aprilia since 1976, sell and install Gibus, KE Outdoor Design and Pratic pergolas and fit them with the same team that builds the kitchen. The kitchen is designed as outdoor furniture; if the pergola is permanently closed on all sides, the case is checked with the Comune.

Outdoor kitchen under a pergola: what the single design means
An outdoor kitchen under a pergola is a stone kitchen — worktop, sink, barbecue or oven, fridge — placed beneath an aluminium pergola that gives shade and keeps the rain off, and drawn together with it. Michelessi, marble and stone specialists in Aprilia since 1976, sell and install the pergolas of the Italian manufacturers Gibus, KE Outdoor Design and Pratic and design them in the same drawing as the stone outdoor kitchen, the paving and the pool; the same team does the installation.
A bioclimatic pergola is an aluminium pergola whose roof has adjustable louvres (louvred, or louvered in American English), and in some models louvres that also pack away. The difference between a pergola bought separately and one drawn with the kitchen shows on site: the posts fall where they do not get in the way of the worktop, the downpipes drain into the paving and not onto the sink, the barbecue smoke has a way out. For how the pergola works read bioclimatic pergola: what it is and how it works; the whole department is on pergolas, awnings and enclosures.
Bioclimatic pergola with outdoor kitchen: what is decided together
Six things are decided together, and they are the ones that cannot be corrected once the paving is down: where the posts stand in relation to the worktop, the roof above the fire, the downpipes, the routes for water, gas and electricity, the lighting and the heights. Michelessi's technical office, which includes an in-house architect, draws them in the 3D design, before anything is ordered.
| Element | What is decided together | What it avoids |
|---|---|---|
| Posts and worktop | Where the posts fall in relation to hob, sink and cupboard doors | A post in the middle of the worktop, doors that hit it |
| Roof above the fire | Which part of the roof sits above barbecue and oven and how it opens | Smoke trapped under the louvres |
| Downpipes and paving | Where the roof water drains and what fall the stone paving has | Water on the worktop, puddles in front of the kitchen |
| Water, gas and electricity | The routes under the paving and inside the structure, settled before installation | Chasing and demolition after the floor is finished |
| Lights and sockets | One scheme for the pergola lighting and the worktop lighting | A dark hob, light points that do not talk to each other |
| Heights | Clear height of the pergola, of the hood or flue, opening of the louvres | A flue that does not fit, louvres that clash |
The three manufacturers declare water drainage built into the structure (downpipes in the posts, perimeter gutters with downpipes in the columns) and LED lighting with spots or strips in the louvres and profiles; Pratic also lists power and USB sockets hidden in the posts. The drawing decides where to route these lines so that they reach the worktop without visible cables. We plan the routes for water, gas and electricity before installation; the connections are made by a qualified installer, whom we coordinate with you.
Where the barbecue smoke goes under a pergola
The smoke of a barbecue or wood-fired oven must be able to rise and leave: under a louvred pergola the part of the roof above the fire is left open, or the flue is taken to the side of the roof; under a fabric roof, the cooking block stands outside the projection of the fabric. Safety distances from the fire are set by the appliance manufacturer: we check them at the survey and respect them in the drawing.
The solutions we draw most often are three:
- Packing louvres above the fire. With the louvres packed away the sky stays open above the kitchen. Among the models declared with packing louvres: Velvet, Velvet Plus and Sway by Gibus, Kedry Skylife by KE Outdoor Design, Brera P and Brera S by Pratic. The louvres of each brand side by side are in Gibus, KE or Pratic.
- Two modules side by side. One module covers the cooking and keeps its louvres open while you cook; the other covers the table and closes if it rains. Gibus offers a multi-module configuration; KE Outdoor Design and Pratic declare modules that can be placed side by side.
- Cooking block at the edge. Barbecue and oven in refractory stone stand at the edge of the pergola or beside it, with the flue rising above roof level; sink and worktop stay under the cover.
One point to clear with the manufacturer at design stage: the bioclimatic pergolas of the three brands have weather sensors (sun, rain, wind and, on some models, snow) that can move the louvres on their own. With the barbecue lit, an automatic closing would push the smoke under the roof. So in the design we settle how the automation is managed, and we advise operating the louvres by hand while the fire is lit, and never leaving it unattended.
Under a retractable-fabric pergola (pergotenda) more caution is needed, because a fabric is not a ceiling. Gibus declares that all its fabrics are flame-retardant, as required for products installed outdoors; flame-retardant, however, does not mean suitable for the direct heat of embers. Under a fabric roof, therefore, barbecue and oven go outside the projection of the fabric or have the flue beyond the roof. The comparison between louvred and fabric roofs is in retractable-fabric pergolas; to shelter only the dining area see folding-arm, drop and cassette awnings. To tell a bioclimatic pergola, a pergotenda, a canopy, a gazebo and a veranda apart see bioclimatic pergola or pergotenda: differences, canopy, veranda.
Which pergola for which outdoor kitchen
Terrace next to the house: wall-mounted pergola. Garden or poolside: free-standing pergola. Large space: two modules side by side. Only the dining area to shelter: pergotenda or awning. The table sets out the most frequent arrangements; the dimensions always come from the survey.
| Arrangement | Pergola | Where the kitchen goes |
|---|---|---|
| Terrace or patio next to the house | Wall-mounted, louvred or fabric | Linear kitchen along the wall, cooking block at the edge, table on the free side |
| Garden or poolside | Free-standing | Island kitchen with dining area; the posts frame worktop and table |
| Large space | Two or more modules side by side | One module over the cooking, one over the table |
| Only the dining area to shelter | Fabric pergola (pergotenda) or folding-arm awning | Stone kitchen outside the projection of the fabric |
The three manufacturers declare bioclimatic pergolas both wall-mounted and free-standing, with modules that can be placed side by side: for example Varia and Joy by Gibus, Kedry Neos by KE Outdoor Design, Opera, Vision and Brera P by Pratic. The models are in Gibus pergolas, KE Outdoor Design pergolas and Pratic pergolas; to choose among the three see Gibus, KE or Pratic. The differences between wall-mounted and free-standing are in wall-mounted and free-standing pergolas; to protect the kitchen from wind and cool weather see pergola enclosures: glass walls and zip screens. If the pergola should also produce energy, see photovoltaic pergolas.
Worktop and structure: granite, quartzite, sintered stone or marble
Under the pergola the worktop can be granite, quartzite, sintered stone (Dekton, Laminam) or marble, and the structure of the kitchen refractory stone, steel or treated wood. The cover helps marble most, because with the pergola closed it is sheltered from rain and strong sun, but it does not replace the water-repellent treatment.
| Worktop material | Under the pergola | Care through the seasons |
|---|---|---|
| Granite | Suitable under the pergola, also next to the fire and by the pool | Minimal: wipe clean after use |
| Quartzite | Light worktops next to the barbecue | Minimal: wipe clean after use |
| Sintered stone (Dekton, Laminam) | Does not absorb and the colour does not fade: terraces, light structures, poolside | Minimal |
| Marble | Sheltered area under the pergola, honed or brushed finish, never polished | Water-repellent treatment renewed every season; acids and grease dried off at once |
For barbecues and ovens we use refractory stone, the same material ovens are made of: it stands next to the flame and holds up to heat over time. We do not use cement and we do not build in masonry, because with the swings in heat the internal structure deteriorates. On terraces, where weight matters, the structure can be steel or treated wood, which is lighter. The worktop is cut in our workshop in Aprilia, by numerical control and finished by hand, from a slab chosen one by one.

Outdoor kitchen by the pool under a pergola
By the pool the kitchen under the pergola works when the pergola is free-standing, the stone paving continues beneath the structure and the drains of roof and pool stay separate. Michelessi also works the stone cladding of swimming pools and floors: pergola, kitchen, pool edge and paving are drawn as a single space, and the same team installs pergola, kitchen and paving.
- Paving. Stone with a finish chosen not to slip when wet, with a fall that takes the water to the drains, away from the kitchen.
- Worktop. Granite, quartzite and sintered stone withstand chlorine and salt air; marble must be kept away from chlorine splashes and treated.
- Wind. On the exposed side a transparent enclosure or a zip screen protects table and cooking zone.
For materials and workmanship see marble and stone floors and swimming pools clad in stone.
Permits for the kitchen and the pergola: what is checked
In many cases a bioclimatic or fabric pergola, attached or annexed to the building and without permanent enclosures, falls within «edilizia libera», work that needs no building permit in Italy (art. 6, paragraph 1, letter b-ter, of Presidential Decree 380/2001, introduced by the 2024 «Salva Casa» decree). The conditions and limits are in the guide permits for pergolas in Italy; here the kitchen is what counts.
The kitchen is designed as outdoor furniture: the same article includes, at letter e-quinquies, «furnishing elements of the grounds belonging to buildings», but whether a kitchen with barbecue, oven and fixed systems falls under that heading is checked case by case with the Comune (the local council). If the pergola is permanently closed on all sides and fitted with fixed systems, the whole must be checked with the technical office of the Comune.
The caution concerns the kitchen. According to a technical firm (article of 29 April 2025), a permanent use of the space — air conditioning, installations, kitchen units — can take the work out of «edilizia libera». So we do not present the kitchen as an extra room, and we design glass or zip enclosures as movable protections: the pergola stays an open space.
Before ordering we check five things:
- Condominium. Rules and common parts are read before the quotation: the rules may ban or restrict awnings and pergolas, by colour and type, and set rules on the use of the terrace (pergola on a condominium terrace).
- Landscape restrictions. In a protected area, for example on the coast, in the Castelli Romani or in historic centres, landscape authorisation may be needed even for works that are free from a building point of view.
- Municipal regulations. Art. 6 leaves in force the town-planning provisions of the Comune: sizes, distances, materials.
- Distances. Boundaries and neighbours' windows are checked at the survey.
- Safety and fire. Art. 6 also leaves these rules in force: the distances from the fire given by the appliance manufacturer count.
We tell you at design stage, before ordering, whether your case needs a step with the Comune. For bars, restaurants and beach clubs, with public-land concessions and food-service rules, see pergolas for restaurants, hotels and beach clubs.
How much does an outdoor kitchen with a pergola cost: what drives the price
What drives the price of the pergola is explained in the guide how much does a bioclimatic pergola cost; for the kitchen the stone and its thickness, the metres of worktop, the structure and the built-in elements count. We do not publish price lists: the quotation comes from the survey and the drawing. For the pergola alone a tax deduction may exist if it meets the ENEA requirements: the guide tax deductions for awnings and pergolas in Italy explains when. The steps from survey to installation are summarised at the end of the page; the whole path is in bespoke pergolas: survey, design and installation.

Frequently asked questions
Frequently asked questions
Can an outdoor kitchen go under a bioclimatic pergola?
Yes, if pergola and kitchen are designed together. You have to decide where the posts fall in relation to the worktop, where the barbecue smoke leaves, where the downpipes drain and how water, gas and electricity arrive. The kitchen is presented as outdoor furniture; if the pergola is permanently closed on all sides, the case must be checked with the Comune.
Where does the barbecue smoke go under a bioclimatic pergola?
It must be able to rise and leave. The part of the roof above the fire is left open, with the louvres packed away or tilted, or the cooking block is placed at the edge of the pergola with the flue at the side of the roof; with the louvres closed the smoke is trapped under the roof. Safety distances are set by the appliance manufacturer and we check them at the survey.
Can the barbecue stand under a fabric pergola?
Only outside the projection of the fabric, or with the flue leaving beyond the roof: the fabric is not a ceiling and, even if the textile is flame-retardant, it is not made for the direct heat of embers. Under the fabric, the worktop, the sink and the table sit well.
Which worktop under a pergola: granite, quartzite, Dekton or marble?
Granite, quartzite and sintered stone (Dekton, Laminam) need less care: they do not fear sun, frost and acids. Marble is the most delicate and does best in a sheltered area, with a honed or brushed finish and a water-repellent treatment renewed every season. The slab is chosen in person at our workshop in Aprilia.
Does an outdoor kitchen under a pergola need permits?
In many cases a bioclimatic or fabric pergola, attached or annexed to the building and without permanent enclosures, falls within «edilizia libera» (art. 6, letter b-ter, Presidential Decree 380/2001). The kitchen is presented as outdoor furniture, but with a barbecue, oven and fixed systems its position is checked case by case with the Comune. Condominium rules, landscape restrictions and municipal regulations also count. Permanently closed on all sides: check with the technical office of the Comune. We tell you at design stage, before ordering.
If the pergola is closed with glass walls, can the kitchen stay underneath?
Sliding glass walls and zip screens are movable protections and go with a pergola that remains an open space. But if all sides are permanently closed and fixed systems are added, the space may be regarded as permanently used and leave «edilizia libera». That is why we design the enclosures together with the kitchen, and the case is checked with the Comune.
How do water, gas and electricity reach the kitchen under a pergola?
They run under the stone paving and inside the structure, along routes decided in the 3D design before installation, so the worktop arrives already cut for sink, hob and tap. The connections are made by a qualified installer, whom we coordinate with you. Pratic also declares power and USB sockets hidden in the posts.
Wall-mounted or free-standing pergola for an outdoor kitchen?
The wall-mounted type suits a terrace or patio next to the house: the kitchen runs along the wall. The free-standing island type suits a garden or poolside: the kitchen becomes an island and the posts frame worktop and table. In both cases a second module can be placed side by side over the dining area.
Can an outdoor kitchen go by the pool under a pergola?
Yes: the most straightforward solution is a free-standing pergola, with stone paving continuing beneath the structure and separate drains for pergola and pool. Granite, quartzite and sintered stone withstand chlorine and salt air; marble must be kept away from splashes and treated. Michelessi also works the stone cladding of swimming pools.
What does the price of an outdoor kitchen with pergola depend on?
It depends on the pergola (model, size, roof, enclosures and accessories), the chosen stone and its thickness, the metres of worktop, the structure (refractory stone, steel, treated wood) and the built-in elements, from barbecue to fridge. That is why we do not publish price lists: the quotation comes from the survey and the 3D design, and the survey is free.
Who installs the pergola and who fits the kitchen?
Michelessi sells and installs Gibus, KE Outdoor Design and Pratic pergolas and fits the stone kitchen with the same installation team: one site and one point of contact. The pergolas are made by the three Italian manufacturers; the worktop and stone parts are cut in our workshop in Aprilia, where we have worked stone since 1976.
